I love a good Madeleine cake, such a simple little recipe to make and super tasty too. My little boy loves nothing more than spending his day off on Wednesday baking and this is a brilliant cake recipe for kids as they’re cooked in 8-10 minutes so even he can wait for them to be ready!
This recipe is adapted from a madeleine recipe by Michel Roux Jr on BBC food we have just added a few extra things to spice up the recipe for Christmas. Here’s what you’ll need –
How to make the French Madeleine Cakes
- Preheat the oven to 200C/400F/Gas 6.
- Whisk together all the ingredients, using both the zest and the juice from both the lemon and clementine. Butter the madeleine or similar cake tray and dust with a little flour.
- Pop into the oven for 8-10 minutes or until the cakes are starting to turn golden brown on the top. Once cooled place on a plate, ours never even hang around that long to cool!
You could add currants for an even more Christmassy feel, I did half with half without for us as we are fifty fifty in this household. If you’re planning on serving these after dinner you could also offer La Cremiere Jersey Salted Caramel Sauce or Creme Fraiche to dip in, yum yum!
