My mum, sister, sister in law and I all have the same Sunday ritual; it involves preparing a lovely family roast, playing nice music in the kitchen and having a little glass of something warming with our pinnies on. We all do it, every Sunday, without fail and it’s one of our little family treats that we have, by accident made a tradition. There will be a lot of texting and finding out what each other will be cooking in the lead up, then the satisfaction of knowing we are all enjoying something simple and wonderful with our loved ones afterwards. There’s nothing more pleasing in my book than spending time at home together on a Sunday enjoying these precious moments, small things done with great love.
This time of year I love to bring a little of the outdoors in, maybe a pretty twig adorned with blossom in a simple enamel French pitcher or a scented spring bulb for the dinner table. We light candles, have a roaring fire and relax with each other, it all gives me a great feeling of sense of home. If I could bottle the smells, the colours and comforts of all these little things then I would of course, but everyone has their own already.

So, I thought I would share a nice easy French dessert recipe with you to try on the family for your next mealtime together. It’s a French classic, Tarte Tatin, upside down apple pudding only we have added some lovely toasted almonds to give ours extra bite. Don’t rush to make it, enjoy the moment putting all the ingredients together to create a scrumptious treat that’s perfect after your Sunday roast.
Here’s our recipe for Salted Caramel French Tarte Tatin with Apples and Toasted Almonds
Ingredients
1 roll of puff pastry
4 apples
150g sugar
120g butter
40g flaked almonds
Lemon juice
Pinch of cinnamon
Pinch of rock salt
Method
1. Preheat the oven to 180C. Peel and core the apples and cut them in half, place them on a tray with a squeeze of lemon juice over the top to stop them turning brown.
2.Toast off the almonds in a dry pan until nice and golden.
3.Combine the almonds, cinnamon, softened butter, salt and sugar and spread evenly in the bottom of a heavy based pan, something like a small round casserole dish is perfect as you need to be able to turn it upside down onto a plate later on.
4.Place the apples on top of the sugar and butter mixture round side down and cover with the roll of puff pastry, trimming off the edges so the pastry lid fits perfectly on top of the pudding.
5. Prick the pastry with a fork, we made a nice heart shape on ours and pop into the oven for around 25 minutes or until the pastry is nicely browned. You can lift up the side of the pastry to check the apples are nicely caramelised and softened underneath. Turn out onto a pretty plate and serve with cream and a drizzle of the lovely caramel sauce from the pan.
