Delicious poured over ice with a dash of soda or to take your gin and tonic to great new heights; Love French Style’s raspberry and basil cordial is great for kids and grown ups alike. All you need is a punnet of raspberries, some sugar, basil and vinegar and you’re away.
This recipe is loosely based on one I found on BBC Good Food, I have cut the sugar content down a bit for this recipe and added some basil. If the basil isn’t to your taste you could try orange zest or mint instead.
Ingredients: 500g raspberries, 300g sugar, 3 tbsp red wine vinegar, handful of basil leaves
Put all the ingredients together in a copper pan and boil down for around 10 minutes until thick and gloopy. Strain the pulp and then add 300ml of water to the pulp and re strain to get all the juice out, add to the syrup. Add the basil leaves and leave to infuse for 30 minutes then strain again. That’s it!
