Salty Caramel Apple Compote

Here’s a little low carb breakfast recipe as I’m trying not to eat too many carbs at the moment, I’ve got to get in shape before my holidays on the Ile de Re! So, I thought I would share a nice little breakfast treat with you which avoids the bread and croissants. This delicious salted apple compote is magic with a few scoops of Greek yoghurt for breakfast.

Core and peel your apples then pop in a nice big pan with a splash of water, just enough for the chunks of apple to splash about in. I love my copper pan as they’re nice and roomy for making jams, chutneys and compotes and  heat up really nice and quickly too.

Next, add a few big pinches of rock salt, a tablespoon of maple syrup and cook down on a medium heat for about 10 minutes. When it’s ready, just blitz up with a stick blender and drizzle a little more syrup over the top if you wish. Maple syrup is a natural sugar so better than using the real deal and combines with the salt and fruity apples it is divine. I warm mine up for a few seconds so you get that nice hot and cold thing going on too.
